(also known as Taratour Sauce)
 
| 1 cup Indo or Al Wadi tahini (sesame seed paste) |
| 3 tablespoons lemon juice |
| 1 clove garlic |
| Salt to taste |
- Place the tahini in a bowl and add a little water to thin it out.
- Stir in the lemon juice, garlic and salt. Taste and correct the seasoning.
Sauce must be the consistency of mayonnaise.
Place falafel balls into the pocket of pita bread and pour the tahini sauce
into the sandwich. Add tomatoes, lettuce, onions, as desired.
